Professor of Trade and Economic Faculty defended dissertation on red cottage cheese

The professor of Trade and Economic Faculty Guzel Alkhamova successfully defended a Candidate dissertation on red cottage cheese.

On 21 February the professor of Applied Biotechnology Department of Trade and Economic Faculty Guzel K. Alkhamova successfully defended her dissertation for the degree of Candidate of Engineering Sciences. The defense took place at Kemerovo Institute of Food Industry.

Research supervisor of the dissertation is Maxim B. Rebezov, Doctor of Science (Agriculture), Professor, Head of Applied Biotechnology Department.

Guzel Alkhamova’s scientific research is devoted to the studying of how stevioside influences the consuming qualities of curd product of specific functionality. The aim of the dissertation was to work out a recipe, technology and way of quality estimation of curd product “Kyzyl Eremsek” (red cottage cheese) of specific functionality. The developed technology allowed to enlarge protein mass fraction, macroelements (Ca, P, K), lower the caloric value of the curd product and extend its storage life.

The choice of the research issue was to a great degree caused by the goals of the state policy in sphere of healthy eating, which is aimed, in particular, at extending the assortment of low-calorie functional dairy products.
