New SUSU Bachelor’s Program in Functional Foods and Nutrition is Taught in English

The new English taught Bachelor’s program is launched by the Institute of Sports, Tourism and Service at South Ural State University. If an applicant wants to become a highly qualified specialist and gain versatile knowledge and practical skills in the field of Food Technology he can get higher education at South Ural State University in the Department of Technology and Organization of Public Catering at Functional Foods and Nutrition Program.

In response to the 21st century environment, Department of Technology and Organization of Public Catering will lead collaborative innovation focused on discovering and applying knowledge in food safety and public health, value-added food processing, ingredient technology, and health-promoting foods; developing professionals and leaders who advance industry, academia, and government both locally and globally and continue to grow professionally over the course of their careers and improving human health via the effective dissemination of the collective knowledge of the department to the stakeholders across the university.

The branch of science I work in is quite interesting for all people because everybody eats every day. And to choose what to eat and how we eat to be healthy is particularly important. When we think, carry out a research and teach in the center of our mind there is a very interesting and ancient statement established by Hippocrates, Greek founder of western medicine, “Let your food be your medicine and medicine be the food.” So in the Department of Technology and Organization of Public Catering I am focusing on my research stream on the functional foods and human nutrition; in the same time educating my students to improve their skills related to this interesting branch of science. This is the branch of science that deals with the study of bioactive compounds in food and their health benefits to maximize value of the food. These bioactive compounds may be added to some food products to increase their nutritional and functional quality. On the other hand, these bioactive compounds could be used to formulate specific functional foods to protect consumers from some health problems like cancer, high level of cholesterol and malnutrition,” shares El-Sohaimy Sobhy Ahmed, a professor of Food Biochemistry, the Program manager.

Good scientific basis and intensive practical skills got by students during their education at South Ural State University, particularly in the Department of Technology and Organization of Public Catering, will prepare students to become leaders and professionals who possess the balance of scientific, problem-solving and communication skills that enable them to add measurable and meaningful value to industry, government and academia and they can strongly compete in the labor market to get a prestigious jobs.

A special feature of this program is that it is taught in English. The core disciplines of the program include the following:

  • Nutrition (Human Nutrition, Nutrition in the Life Cycle, Community Nutrition, Sport Nutrition, Applied Nutrition)
  • Chemistry (Chemistry of Lipids, Enzyme Chemistry, Chemistry of Vitamins, Chemistry of Carbohydrates)
  • Consumers’ Behavior
  • Risk Management in Food Production
  • Food Microbiology
  • Lipid Metabolism
  • Principles of Food Science

Upon completion of this course, students will be able to critically describe the molecular pathways involved in the development of chronic diseases and international regulations with respect to functional foods and nutraceuticals, evaluate the health implications of current functional foods, develop the concept for a functional food product, define functional foods and nutraceuticals, learn how novel treatment of important diseases may be addressed through improved nutrition or the development of targeted health promoting foods and beverages.

By earning a bachelor's in Functional Foods and Nutrition at South Ural State University, students will be able to take the first step toward becoming registered Functional Food professionals. Through this program, students will gain an understanding of the relationship between diet and human health and be able to apply that knowledge in their career. This program will be a unique program in Russian Federation to prepare specialists in functional foods, which makes it a perfect for working adults. Graduates of this program may choose from a variety of places to work including major medical centers, hospitals, public health settings, community agencies, private consulting firms, higher education, or business and industry, pharmaceutical companies, and restaurants.

The main aim of the program is to prepare high qualified specialists on according the international standard to compete in the labor market and support the national economics.
